I read a review that said an owner threw away 50% due to fat. The white parts of the heart pieces aren't fat--they're the aorta (a huge, tough artery), the pericardium (a tough bag that surrounds the heart), the vena cava (a huge tough vein), and other various blood vessels. LOL. My dogs loved it. It's a great muscle meat for them when they're not interested in ground anything and they always go for the white parts first. The texture is perfect and gets them chewing and their eyes rolling back into their heads. It's a favorite.

I use small pieces of heart for training food for my dogs. Even though the dogs love the cooked pieces, when I prepare it I throw out close to 50% of the package because there is so much fat.
